Broccoli - Sweet corn stir fry

Broccoli - Sweet corn stir fry is a very easy & versatile recipe and we make it often. This is very much kid-friendly and we can adjust the spices as per our taste and recipe. 

Broccoli - Sweet corn Stir Fry!
If we are using as a side dish for Indian rice varieties or kathi rolls, I use Garam masala and lime juice; for sandwich filling I prefer Italian seasoning and will add cheese along with it. Also we can just add cooked rice and mix it up to have a quick veggie rice :) Choice is up to us:)

Ingredients:
  • Broccoli florets - 2 cups
  • Sweet corn kernels - 1 cup (I used frozen)
  • Extra virgin Olive Oil / any cooking oil - 2 tsp
  • Cumin seeds - 1/2 tsp
  • Garlic - 1 Tbsp, finely chopped
  • ٭Spice Powder - 1/2 tsp

Crispy Oven roasted Broccoli with Indian Spices

Crispy Oven roasted Broccoli
Broccoli is a very healthy vegetable and its really difficult to make the kids to consume it. So I usually make parathas, cutlets or just roasting in the oven. This is a very easy one and yields crispy broccoli florets. Fresh broccoli florets are highly recommended to get really crispy ones and we can adjust the spices as per our preference. Addition of corn starch yields the crispiness and we can serve serve them as such as an appetizer or we can have it as a side for rice.

Ingredients:

  • Fresh Broccoli - 1 large head or 2 small heads
  • Olive Oil - 1 to 2 tbsp
  • Corn starch  - Around 1 and 1/2 tbsp
  • Garam Masala - about 1 tsp
  • Turmeric powder - 1/4 tsp
  • Red chilly powder  - 1/2 tsp
  • Salt  - to taste
Method:

  1. Pre heat oven to 400 or 425 F
  2. Wash the broccoli and cut into bite sized florets;Allow them to dry until there's no moisture left out or wipe out any water on it using paper towel (Moisture makes them soggy)

Broccoli - Potato Stir Fry

Servings: 2-3 Servings
Broccoli-Potato Stir Fry
Ingredients:
  • Broccoli florets - 2 cups
  • Potato, cut into thin wedges - 2 nos
  • Oil - 2 tsp
  • Cumin seeds - 1/2 tsp
  • Ginger Garlic paste - 1 tsp
  • Turmeric powder - 1/2 tsp
  • Spice Powder - 1-2 tsp (I used home made Pav Bhaji Masala, and it can be replaced with any Masala powders as per taste)
  • Salt - to taste

Method:

  1. Place the potato wedges in hot water for 5 mins and drain excess water; keep aside
  2. Clean and chop broccoli into bite sized florets, we can also blanch them in hot water for 1-2 mins
  3. Heat oil in a pan, once it becomes hot add the Cumin seeds and allow them to splutter
  4. Add the Ginger Garlic paste and saute for a min
  5. Add the potato pieces along with turmeric powder and saute for 2-3 mins
  6. Cook covered until potato gets half cooked
  7. Now add the Broccoli florets and saute for another 2 mins
  8. Add required salt and Masala powder, mix well and cook covered for 2 mins till broccoli gets cooked but it should still retain its crunchiness
  9. Once its done, fry for one more min and switch it off
  10. Serve hot!

Cheese stuffed Broccoli Cutlets

Servings: Yields 5-6 cutlets

Cheese stuffed Broccoli Cutlet
Ingredients:
  • Broccoli, finely chopped / grated - 1 cup heaped
  • Potatoes - 1 no
  • Small Onion, finely chopped - 5-6 nos
  • Garlic, finely chopped - 3 pods
  • Corn starch / corn flour - 1-2 tbsp
  • Cheese - 1 slice or 2-3 cubes (as required)
  • Pepper Powder - to taste
  • Salt - to taste
  • Oil - 1 tsp + for toasting
  • Optional: Green chillies, finely chopped (can be avoided if making for kids)
Method:
  1. Boil the potatoes and grate / mash it well without any lumps
  2. Heat 1 tsp of oil in a pan, add finely chopped small onions and saute for 1 min
  3. Add the finely chopped garlic and saute till they turn golden brown; If using chillies, we can add at this stage and fry well
  4. Add the grated / finely chopped broccoli pieces along with required salt and saute in medium flame for few mins till it gets cooked
  5. Once the broccoli is done, switch off and allow the mixture to cool
  6. In a bowl, add the sauted broccoli and mashed potato, mix well
  7. Add 1 tbsp of corn flour to it and knead well to form a stiff dough. If required we can add another 1/2 tbsp of corn powder
  8. Make equal sized balls out of the kneaded dough; flatten one ball into a circular patty
  9. If using cheese slice, we can cut them into thin strips and roll it as below and place in the center of the patty; when using cubes, we can grate it and place the same
  10. After placing the cheese at the center, bring the sides inwards and form a ball
  11. Flatten it gently into circular cutlet shapes; repeat the same for the remaining dough
  12. Heat a pan and drizzle few drops of oil, place the patties and allow to toast for 1-2 mins in medium flame
  13. Then flip it over and cook the other side too with few drops of oil till it becomes golden brown
  14. Once its done, remove it and serve hot!

Broccoli-Bell Pepper Rice

Servings: For 1-2 servings
Broccoli Bell Pepper Rice
Ingredients:
  • Rice - 1/2 cup
  • Broccoli florets, chopped (or grated in big holed grater) - 1 cup
  • Bell pepper (Capsicum), finely chopped- 1/2 cup (I used yellow/red variety)
  • Onion, finely chopped - 1 no
  • Green chilly, slitted - 1 no
  • Ginger, finely chopped - 1 tsp 
  • Garlic, finely chopped - 1 tsp
  • Sambhar powder / Chicken Masala Powder - 1 tsp
  • Turmeric powder - a pinch
  • Oil - 1 tsp
  • Mustard Seeds - 1/2 tsp
  • Peanuts - 1 tbsp
  • Salt- to taste
Method:
  1. Soak rice for 20 mins and cook with few drops of oil and a pinch of salt. Cool the cooked rice and keep aside (Make sure the grains are separate and not mushy)
  2. Heat Oil in a pan, add mustard seeds, once it splutters add the peanuts, fry for few secs
  3. Add the finely chopped Ginger, Garlic and Onions one by one and saute till it becomes transparent and start to browning
  4. Add the chopped Bell pepper and fry for 2 mins (It should be bit crispy)
  5. Add the grated / chopped broccoli florets, turmeric and sambhar powder, saute till the raw smell goes off
  6. Add required salt and switch off
  7. Mix the cooked rice with the broccoli mixture gently
  8. Serve with Papad / raita or pack it for lunch box

Broccoli Parupusili

Servings: 3-4 persons


Broccoli Parupusili
 Ingredients:
  • Broccoli crown, - 1 no
  • Toor Dhal - 1/3 cup
  • Channa Dhal - 1/4 cup
  • Red Chillies - 2 (adjust as per spiciness)
  • Salt - to taste
  • Oil - 1 tsp
  • Mustard seeds - 1/2 tsp
  • Asafoetida - a generous pinch
  • Curry leaves - few
  • Turmeric powder - 1/4 tsp
Method:
  1. Wash the broccoli florets and cut it into fine pieces, I prefer to grate them so it gets well blended and easy to eat
  2. Wash and soak the dhals in hot water for atleast an hour (If you have time, you can soak it in normal water for 2-3 hours)
  3. Grind the soaked dhals along with red chillies, asafoetida and enough salt (without any water) into coarse mixture
  4. Steam cook the coarsely ground dhals for 10-12 mins and allow to cool
  5. Once it becomes warm, crumble it
  6. Cook the grated broccoli florets for 3-5 mins till its slightly done but not mushy; I microwaved it for a min and you can also steam it
  7. Heat oil in a pan, once it is hot add the mustard seeds then curry leaves
  8. Then add the crumbled dhal and turmeric powder; saute well for 2-3 mins
  9. Add the cooked broccoli and saute for few mins till all gets combined
  10. Check for salt and switch off
  11. Serve hot with rice and your favourite curry

Vegetable Omelette

Omelette is a common and a versatile dish; most of the kids will surely love it. This Vegetable omelette is one of the ways to sneak more vegetables into our diet - especially the little picky eaters:)

Ingredients:
  • Eggs - 2 nos (at room temperature)
  • Vegetables, chopped (any choice) - 3/4 - 1 cup (I used broccoli and mushroom)
  • Onion, chopped - 1 medium size
  • Milk - 1 tbsp (Optional)
  • Turmeric powder - a generous pinch
  • Pepper powder- to taste
  • Garam masala - 1/2 tsp 
  • Salt - as required
  • Green chilly, chopped- 1 no (Optional)
  • Red chilly powder - 1/4 tsp (Optional) 
Method:
  1. In a wide bowl, add the eggs and whisk well
  2. Add milk to the egg and stir well (little milk makes omelette fluffier)
  3. Now add the salt, turmeric powder, pepper powder, garam masala and chilly powder (if using) and whist until it gets combined
  4. Add the chopped onions, vegetables and green chilly (if using) to it and mix gently
  5. Heat the pan with few drops of oil
  6. Once its hot, pour the egg mixture into it and reduce the flame to medium
  7. Cover and cook for a minute and then flip it over and cook the other side
  8. Once done, transfer to the plate and serve:)
  9. Adding vegetables are purely your choice, you can use tomatoes, mushrooms, carrots, sweet corn, cauliflower, spinach etc., 
  10. For picky eaters, you can even add grated veggies rather than chopped ones 
  11. If you're giving for kids, omit chillies and chilly powder
