Oats- Banana blender waffles (Gluten, Sugar & Dairy free)

Hey there! I’ve got another healthy waffle recipe for you. 

These days, I’m a big fan of blender waffles and pancakes. You just throw everything in the blender, blend it up, and voila! Waffles or pancakes are ready. It’s so easy, right?

Well, I was on the hunt for some easy but healthy protein-rich breakfast recipes, and I stumbled upon this one. I’ve tried it a bunch of times now, and I’ve tweaked it a bit to suit our taste preferences. It’s become one of our favorites!  

And guess what? We don’t add any dairy here - no milk, yogurt, or even dairy-free milk. And the best part? No added sugar or sweetener either and also using gluten free oats. These banana oat waffles are packed with nutrients and can even be packed for kids’ lunches or snack boxes. They’ll keep you full until your next meal!

I’m always on the hunt for yummy, quick, and healthy breakfast ideas to kickstart our days. It’s like a culinary adventure!

Banana Chocolate chip Pancakes (Eggless, Whole wheat & Vegan option included)

Pancakes are always the favourite breakfast not only for the kids but for the entire family.  I have already posted few pancake recipes in my blog and all those were made from whole grain flour only, strictly no to the refined white flour.

Nowadays, whenever I have got over ripen bananas, either I prepare these banana muffins or banana bread or pancakes.

Banana chocolate chip pancakes - These are eggless pancakes and made with whole wheat flour. Since banana and milk are not compatible foods together, I have used coconut milk here instead of regular milk. We can use unsweetened coconut or almond milk; if we are not having any of these, we can just grind some coconut and extract milk and use it. We can also use plain water but the taste will differ.
            
Dairy-free & Vegan option: This can easily be adapted to a vegan recipe by replacing the chocolate chips with vegan/dairy free chocolate chips or even chopped nuts and we can use coconut oil for toasting instead of butter.
                       
Ingredients:

Dry Ingredients:
  • Whole Wheat flour/ Atta - 1 3/4 cup
  • Baking powder - 2 tsp
  • Cinnamon powder - 1/2 tsp
  • Salt - a pinch

Eggless Whole Wheat Banana Walnut Muffins (No white sugar)

Its very hard to resist a good muffin! Kids will love muffins for school snacks, breakfast and sometimes even for dinner:). 
                                  

But the store bought muffins are loaded with many unwanted ingredients and preservatives. As Moms, we always looking for healthy snacks for our kids. And also we can do anything to make them eat healthy:) 

                                  

I already had few muffin recipes in my blog and this one adds to my list. This is my always go-to recipe whenever I have ripe bananas.

                                 

In my cooking, I am not using refined, bleached white flour and now am trying to limit refined sugar and oil too. So here comes the healthy muffin loaded with all goodness of yummy bananas, whole grain flour, Organic unrefined virgin coconut oil, Organic coconut sugar and walnuts. This is also an eggless muffin.

                                          
 
Ingredients: 

Dry Ingredients:

  • Whole Wheat flour/Atta - 3/4 cup (I used white whole wheat flour)
  • Baking soda -1/2 tsp
  • Baking powder - 1/2 tsp
  • Cinnamon powder- 1/8 tsp
  • Salt - a pinch
  • Walnuts, chopped- 2-3 Tbsp

Whole Wheat Banana Chocolate Cake (Eggless & Butterless)

Cooking Time: 25-40 mins
Servings: yields 1 big square cake or 2 loaves


WW Banana Chocolate Cake
Ingredients: 

Dry Ingredients:

  • Whole Wheat flour - 2 cups
  • Cocoa Powder - 2/3 cup
  • Baking soda - 1 1/2 tsp
Wet Ingredients:
  • Banana, ripen - 4 nos (long variety)
  • Olive Oil - 4 tbsp
  • Brown Sugar - 1- 1 1/2 cups, packed (If we dont want to be sweet, we can use just 1 cup as I used here)
  • Vanilla extract - 1 tsp
  • Hot Water (Not boiling, just hot) - 1 1/2 cups
  • Lime / Lemon Juice - 2  tsp
Method: 
  1. Pre-heat oven to 350 F for 10 mins
  2. Grease the baking pan and keep it ready
  3. In a sieve, add the wheat flour, Baking soda and Cocoa powder. Sieve the dry ingredients into a wide plate/bowl
  4. In another large mixing bowl, mash the bananas well
  5. Add the oil and whisk well 
  6. Add the Brown sugar and beat well
  7. Add Vanilla extract and mix well
  8. Add warm water and mix to form a uniform mixture
  9. Then add the lime juice into it and mix 
  10. Add the dry flour mix into the wet mixture and blend well without any lumps
  11. Pour the batter into the baking trays
  12. Bake in preheated oven for about 30-40 mins or until its done (can be checked by using tooth pick method). Since I used small cake pans, mine got done in 25 mins
  13. Once its done, remove from the oven and allow to cool for 5 mins in the pan
  14. Then transfer them to cooling rack and allow to cool
  15. Slice and Serve hot!

Peanut Butter Choco Chip Banana Bread (Whole Wheat)

Servings: 5-6 servings

PB Choco Chip Banana Bread
 Ingredients: 

Dry Ingredients:

  • Wheat Flour / Atta - 1 cup
  • Baking soda - 1 tsp
  • Salt - 1/4 tsp
Wet Ingredients:
  • Banana, ripen - 3 nos (long variety)
  • Egg - 1 no
  • Creamy Peanut Butter - 1/2 cup
  • Brown Sugar - 1/3 cup, packed (I used Dark Brown sugar)
  • Vanilla extract - 1 tsp
  • Milk - 2-3 tbsp (If using store bought thick peanut butter)
Other Ingredients
  • Mini Chocolate chips - 1/3-1/2  cup
  • Wheat flour - 2 tsp 
Method: 
  1. Pre-heat oven to 350 F for 10 mins
  2. Grease the baking pan and keep it ready
  3. In a sieve, add the wheat flour, Baking soda and salt. Sieve the dry ingredients into a wide plate/bowl
  4. In a bowl, mash the bananas well  and keep it aside
  5. In another bowl, add the egg and beat well until it becomes pale and creamy

  6. To the beaten egg, add the brown sugar, beat well until it gets combined
  7. Then add the peanut butter and milk if needed and beat again to form an uniform mixture

  8. Add the vanilla extract mix together
  9. Now add the mashed banana into this mixture and mix well
  10. Add the sieved flour into the wet mixture and mix gently till combined
  11. Dust the Chocolate chips with 2 tsp of flour and then add them into the batter and mix gently
  12. Pour the batter into the prepared bread pan (I used my small bundt pan)
  13. Bake in the preheated oven for 25-35 mins or until its done (can be checked by using tooth pick method)
  14. Once its done, remove from the oven and allow to cool for 5 mins; then remove from the pan
  15. Slice and serve hot!

Apple-Banana Oats Smoothie

Servings: 1-2 servings



 Ingredients: 
  • Oats (Quick cooking or old-fashioned) - 1/4 cup to 1/3 cup
  • Milk / Non-dairy milk -  1-2 cups (adjust as per requirement)
  • Ripe Banana - 1 no, peeled & chopped
  • Apple - 1 no, peeled & cubed
  • Cinnamon powder - 1/2 tsp
  • Chopped nuts - for garnishing (Optional)

Milk with fruits might not suit for some people and in that case we can use non-dairy milks like almond milk or coconut milk.

Banana-Nut Bread (Whole Wheat)

Servings: yields 1 loaf
Banana Nut Bread
Ingredients:
Dry Ingredients:
  • Whole Wheat flour (Atta) - 1 1/2 cups
  • Baking soda - 1 tsp
  • Cocoa powder - 1 tbsp
  • Cinnamon powder - 1/2 tsp
  • Cardamom powder - 1/2 tsp
  • Salt - 1/2 tsp
Wet Ingredients:
  • Ripe Bananas-  4 nos (Long yellow variety)*
  • Eggs - 2 nos
  • Sugar - 3/4 cup **
  • Cooking Oil - 1/2 cup (I used Olive Oil)
  • Curd / Yogurt- 1/4 cup
  • Vanilla extract -1 tsp
Other Ingredients
  • Walnuts, chopped - 1 cup
*Bananas should be very well ripen for Banana Breads
**Since we are using over ripe bananas, the sweetness was more so I used just 3/4 cup of sugar, if we want on sweeter side, we can increase it to 1 cup

Method:
  1. Preheat oven to 350 F degrees and grease / line the loaf pan; keep it ready. Here I used 9x5 inches Loaf pan
  2. In a sieve, add the wheat flour, Baking soda, Cinnamon powder, Cardamom powder, Cocoa powder and salt
  3. Sieve the dry ingredients into a wide plate/bowl
  4. In another bowl, mash the bananas well and keep it aside
  5. In a mixing bowl, add the eggs and sugar, beat well for around 4-5 mins until it become light and fluffy

  6. Slowly drizzle the oil into the egg mixture and continue to beat until all the oil is added and gets well combined
  7. Add the curd and vanilla extract, beat until mixed
  8. Add the dry four mixture into it and gently mix so that it gets combined
  9. Add in the mashed banana and gently mix
  10. Now fold in the chopped walnuts and give a gentle mix
  11. Pour the batter into the prepared loaf pan
  12. Bake the bread for 50-60 minutes or until toothpick inserted in center comes out clean
  13. Remove the bread from the oven and allow it to cool for 10 minutes before turning it out of the pan onto a rack to cool completely
  14. Once it gets warm, slice it and serve!

Ragi-Wheat Banana Muffins (Eggless)

Servings: yields 10 - 12 muffins


Ragi-Wheat Muffins - So Soft!!!
Ingredients: 

Dry Ingredients:

  • Ragi Flour - 1/2 cup
  • Wheat Flour / Atta - 1/2 cup
  • Baking powder- 1 1/2 tsp
  • Baking soda - 1/4 tsp
  • Cardamom powder - 1/2 tsp
  • Salt - a pinch
Wet Ingredients:
  • Banana, ripen - 3 nos (long variety)*
  • Brown Sugar - 1/4 cup
  • Curd / Yogurt - 1/2 cup
  • Oive Oil - 1/4 cup
Other Ingredients
  • Toasted Almonds, chopped - 1/2 cup (dusted with 1 tsp of wheat flour)
*Bananas should be ripen very well for the muffins to give the natural sweetness
Method:
 

  1. Pre-heat oven to 350 F for 10 mins
  2. Grease the muffin tray or line it with muffin liners and keep it ready
  3. Roast the ragi flour in low flame for few mins till we get nice aroma of the roasted flour and allow to cool
  4. In a sieve, add the wheat flour, Roasted Ragi flour, Baking powder, Baking soda, Cardamom powder and salt. Sieve the dry ingredients into a wide plate/bowl
  5. In another bowl, mash the bananas well
  6. Add the Brown sugar, curd and oil, whisk well to form uniform mixture

  7. Add the sieved flour into the wet mixture and mix gently till combined
  8. Add the chopped almonds into the batter and mix gently

  9. Spoon the batter into muffin cups; fill only 3/4 th of the cup
  10. Bake in the preheated oven for 15-20 mins or until its done (can be checked by using tooth pick method)
  11. Once its done, remove from the oven and allow to cool for 5 mins
  12. Then transfer the muffins from the tray to cooling rack
  13. Serve Warm with a glass of milk!
