Broccoli - Sweet corn stir fry

Broccoli - Sweet corn stir fry is a very easy & versatile recipe and we make it often. This is very much kid-friendly and we can adjust the spices as per our taste and recipe. 

Broccoli - Sweet corn Stir Fry!
If we are using as a side dish for Indian rice varieties or kathi rolls, I use Garam masala and lime juice; for sandwich filling I prefer Italian seasoning and will add cheese along with it. Also we can just add cooked rice and mix it up to have a quick veggie rice :) Choice is up to us:)

Ingredients:
  • Broccoli florets - 2 cups
  • Sweet corn kernels - 1 cup (I used frozen)
  • Extra virgin Olive Oil / any cooking oil - 2 tsp
  • Cumin seeds - 1/2 tsp
  • Garlic - 1 Tbsp, finely chopped
  • ٭Spice Powder - 1/2 tsp
  • Salt - to taste
  • Lime / Lemon juice - as needed (Optional)
٭ Spice powder - I used home made Garam masala but it can be replaced with any Masala powders as per taste or just use pepper powder and any dry herbs / seasonings

Method:
  • Clean and chop broccoli into small bite sized florets, we can also blanch them in hot water for 1-2 mins
  • Here I have used frozen sweet corn kernels, if we are using normal corn, we need to pre-cook it 
  • Heat oil in a pan, once it becomes hot add the Cumin seeds followed by chopped garlic and saute for few secs
  • Add the broccoli florets and saute for 2-3 mins
  • Now add the sweet corn kernels and saute for another 2 mins. Add required salt and mix well
  • Sprinkle little water and cook covered until the veggies get cooked
  • They will get cooked in the steam itself and make sure not to over cook it. We need to retain the colour and crunchiness of broccoli florets
  • Once cooked, add the Masala powder, mix well and cook covered for 1-2 mins in low flame
  • Switch it off and once it become warm, add few drops of lime juice (if using) and mix well
  • Serve as a side dish for any rice variety or as a sandwich filling or wrapped in rotis or just toss up some cooked rice to make a veggie rice
