Eggless Whole Wheat Banana Walnut Muffins (No white sugar)

Its very hard to resist a good muffin! Kids will love muffins for school snacks, breakfast and sometimes even for dinner:). 
                                  

But the store bought muffins are loaded with many unwanted ingredients and preservatives. As Moms, we always looking for healthy snacks for our kids. And also we can do anything to make them eat healthy:) 

                                  

I already had few muffin recipes in my blog and this one adds to my list. This is my always go-to recipe whenever I have ripe bananas.

                                 

In my cooking, I am not using refined, bleached white flour and now am trying to limit refined sugar and oil too. So here comes the healthy muffin loaded with all goodness of yummy bananas, whole grain flour, Organic unrefined virgin coconut oil, Organic coconut sugar and walnuts. This is also an eggless muffin.

                                          
 
Ingredients: 

Dry Ingredients:

  • Whole Wheat flour/Atta - 3/4 cup (I used white whole wheat flour)
  • Baking soda -1/2 tsp
  • Baking powder - 1/2 tsp
  • Cinnamon powder- 1/8 tsp
  • Salt - a pinch
  • Walnuts, chopped- 2-3 Tbsp

Whole Wheat Pancake Mini Muffins

Preparation Time: 5 mins + 10 mins waiting time 
Cooking Time: 9-12 mins
Servings: yields around 24 mini muffins + 5 small muffins

WholeWheat Pancake Muffins
I have already posted an eggless whole wheat pancake recipe here and this one uses egg. During weekend mornings, it will be bit tired (or lazy :)) to stand before stove while making pancakes. To make it easier i tried baking them in mini muffin tins and it came out really well. I already tried an eggless version which I used to prefer on days when I wont eat eggs but didnt take pictures; so havent posted yet:)

These will be surely a hit among kids due to its size and ofcourse who will tell no to such an yummy mini bites and also made from whole wheat flour. Also we can make varieties by adding different flavour and toppings.

Dry Ingredients: 

  • Whole Wheat flour - 2 cups
  • Baking powder - 1 1/2 tsp
  • Baking soda - 1 tsp
  • Salt - a pinch

Dates-Walnut Chocolate Muffins (Whole Wheat & Eggless)

Cooking Time: 25-30 mins
Servings: yields around 12-15 muffins 


Dates-Walnut Chocolate Muffins

Mini Muffins:)
 Ingredients:

Dry Ingredients:
  • Wheat flour / Atta - 1 cup
  • Cocoa Powder - 1/4 cup
  • Baking soda - 1 tsp
  • Salt - a pinch
Wet Ingredients:
  • Black Dates, deseeded - 1 cup (around 20-25 nos) 
  • Milk - 2 cups, divided
  • Brown Sugar - 1/3 cup (I used Dark Brown Sugar; Jaggery can also be used)
  • Cold Butter - 1/2 cup
  • Vanilla extract - 1 tsp
Other Ingredients:
  • Walnuts, chopped - 1 cup
  • Wheat flour - 2 tsp
Method:
  1. Soak the deseeded dates in 1 cup of warm milk for 2-3 hrs

  2. Pre heat oven to 350°F
  3. Grease the muffin pans / line with muffin liners
  4. In a sieve add the dry ingredients (Wheat flour, baking soda, salt and cocoa powder) and sieve them into a bowl and keep it ready
  5. In a blender, add the soaked dates along with milk and grind to a smooth puree and keep aside
  6. Finely chop the walnuts and mix it up with 2 tsp of wheat flour to avoid sinking during baking process
  7. In a mixing bowl, add the cold butter and brown sugar and beat it well till the sugar gets dissolved and become creamy texture
  8. To this add the remaining 1 cup of milk, Vanilla extract and dates puree; blend well
  9. Now add the sifted flour into the wet ingredients and gently mix it up to form a batter
  10. Fold in the toasted nuts, mix gently
  11. Spoon the batter into muffin tins 
  12. Bake for around 20-30 minutes (depend on the size of the muffins), or until toothpick inserted in center comes out clean 
  13. Cool for about 10 minutes in the pan and then remove from pan to cooling rack
  14. Serve warm with a glass of milk!

Ragi-Wheat Banana Muffins (Eggless)

Cooking Time: 17-20 mins
Servings: yields 10 - 12 muffins


Ragi-Wheat Muffins - So Soft!!!
Ingredients: 

Dry Ingredients:

  • Ragi Flour - 1/2 cup
  • Wheat Flour / Atta - 1/2 cup
  • Baking powder- 1 1/2 tsp
  • Baking soda - 1/4 tsp
  • Cardamom powder - 1/2 tsp
  • Salt - a pinch
Wet Ingredients:
  • Banana, ripen - 3 nos (long variety)*
  • Brown Sugar - 1/4 cup
  • Curd / Yogurt - 1/2 cup
  • Oive Oil - 1/4 cup
Other Ingredients
  • Toasted Almonds, chopped - 1/2 cup (dusted with 1 tsp of wheat flour)
*Bananas should be ripen very well for the muffins to give the natural sweetness
Method:
 

  1. Pre-heat oven to 350 F for 10 mins
  2. Grease the muffin tray or line it with muffin liners and keep it ready
  3. Roast the ragi flour in low flame for few mins till we get nice aroma of the roasted flour and allow to cool
  4. In a sieve, add the wheat flour, Roasted Ragi flour, Baking powder, Baking soda, Cardamom powder and salt. Sieve the dry ingredients into a wide plate/bowl
  5. In another bowl, mash the bananas well
  6. Add the Brown sugar, curd and oil, whisk well to form uniform mixture

  7. Add the sieved flour into the wet mixture and mix gently till combined
  8. Add the chopped almonds into the batter and mix gently

  9. Spoon the batter into muffin cups; fill only 3/4 th of the cup
  10. Bake in the preheated oven for 15-20 mins or until its done (can be checked by using tooth pick method)
  11. Once its done, remove from the oven and allow to cool for 5 mins
  12. Then transfer the muffins from the tray to cooling rack
  13. Serve Warm with a glass of milk!

Peanut Butter Banana Muffins (Whole Wheat)

Whole Wheat Banana Muffins with the addition of creamy peanut butter are super soft and moist:) 
Peanut Butter Banana Muffins
Ingredients: 

Dry Ingredients:

  • Wheat Flour / Atta - 1 cup
  • Baking soda - 1 tsp
  • Salt - 1/4 tsp
Wet Ingredients:
  • Banana, ripen - 3 nos (long variety)
  • Egg - 1 no
  • Creamy Peanut Butter - 1/2 cup (I used home made chocolate flavoured Peanut Butter)
  • Brown Sugar - 1/3 cup
  • Vanilla extract - 1 tsp
Other Ingredients
  • Chocolate chips (Since I had used chocolate flavoured PB, didnt add this time) 
Method: 
  1. Pre-heat oven to 350 F for 10 mins
  2. Grease the muffin tray or line it with muffin liners and keep it ready
  3. In a sieve, add the wheat flour, Baking soda and salt. Sieve the dry ingredients into a wide plate/bowl
  4. In another bowl, mash the bananas well or we can blend it in blender
  5. To this add the creamy peanut butter, blend well
  6. Add in the egg and brown sugar, mix well until combined
  7. Add the vanilla extract mix together to form uniform mixture
  8. Add the sieved flour into the wet mixture and mix gently till combined
  9. If using chocolate chips, add them into the batter and mix gently
  10. Spoon the batter into muffin cups; fill only 3/4 th of the cup
     
  11. Bake in the preheated oven for 15-20 mins or until its done (can be checked by using tooth pick method)
  12. Once its done, remove from the oven and allow to cool for 5 mins
  13. Then transfer the muffins from the tray to cooling rack
  14. Serve Warm with a glass of milk!

Cinnamon sprinkled Banana - Walnut Muffins (Whole Wheat)

Servings: yields 12 muffins
Cinnamon-Banana-Walnut Muffin
Ingredients: 

Dry Ingredients:
  • Wheat Flour / Atta - 1 1/2 cup
  • Baking soda - 3/4 tsp
  • Baking powder - 1/4 tsp
  • Salt - 1/4 tsp
Wet Ingredients:
  • Banana, ripen - 2 nos (long variety)
  • Eggs - 2 nos
  • Butter, melted- 1/2 cup
  • Honey - 1/3 cup
  • Vanilla extract - 1 tsp
  • Cinnamon powder - 1/2 tsp
Other Ingredients
  • Walnuts, chopped - 1/2 cup
  • Wheat flour - 1-2 tsp 
  • Oil spray / oil - for greasing
  • Cinnamon sugar - as required 
(Cinnamon sugar can be prepared by mixing 1/4 cup of sugar with 1 tbsp of ground cinnamon and stored in air tight container)


Cinnamon Sugar
 Method: 
  1. Pre heat oven to 350 F for 10 mins
  2. Grease the muffin tray or line it with muffin liners and keep it ready
  3. In a sieve, add the wheat flour, Baking soda, Baking powder and salt. Sieve the dry ingredients into a wide plate/bowl
  4. In another bowl, mash the bananas well or we can blend it in blender
  5. To this add the melted butter, blend well
  6. Add in the eggs and honey, mix well until combined
  7. Add the vanilla extract and cinnamon powder, mix together to form uniform mixture
  8. Add 1-2 tsp of wheat flour to the walnuts and mix well so it gets uniformly dusted (this step is to prevent sinking of the nuts while baking)
  9. Add the sieved flour into the wet mixture and mix well till combined
  10. Add the nuts into the batter and mix gently
  11. Spoon the batter into muffin cups; fill only 3/4 th of the cup 
  12. Sprinkle the cinnamon sugar over the top of the muffins
  13. Bake in the preheated oven for 20 mins or until its done (can be checked by using tooth pick method)
  14. Once its done, remove from the oven and allow to cool for 5 mins
  15. Then transfer the muffins from the tray to cooling rack
  16. Serve Warm with a glass of milk!
