Butter Corn Pasta - Easy Pasta Recipes

Category: Pasta / Macaroni

Servings: 1-2 servings

Yummy Cheesy Pasta
Butter corn pasta is one of the easy pasta recipes and a favourite among the kids. 
If we have pasta sauce in hand, we can do this in a jiff, if not we can also use finely chopped tomatoes or pureed tomato. 

Butter Corn Pasta

We can also add finely chopped bellpeppers to it to make it more nutritious and colourful. 
Adding cheese is an optional here, it tastes good even without the cheese.


Ingredients:
  • Pasta - 1 cup (I used small Ditalini Pasta)
  • Sweet corn, frozen - 1/2 cup 
  • Pasta sauce - About 1/2 cup (use as needed)
  • Butter - 1 Tbsp
  • Basil leaves / Italian seasoning - to taste
  • Salt - to taste
  • Pepper powder - to taste
  • Mozzarella cheese, grated - as required (Optional)
  • Water - as required
 Notes:
  • This time I have used store brought Organic Garden vegetable Pasta sauce here and you can find one of my home made pasta sauce recipe here: Homemade Pasta Sauce
  • If we are not having pasta sauce in hand, we can replace it with pureed tomatoes or tomato paste. In that case, add finely chopped clove of garlic while sautéing and a little more Italian seasoning at the end
  • For make it more interesting and colorful, we can add finely chopped coloured bellpeppers along with the sweet corn

Whole Wheat Cheesy Garlic Bread sticks

Whole Wheat Cheesy Garlic Bread sticks
                               
Cheesy Garlic bread sticks are always kids favourite:) These garlic bread sticks are made with whole wheat flour and they are always great for a weekend dinner along with a soup. Also these are soft enough for the toddlers to munch on :)

 Ingredients:

For Dough:

  • Whole wheat flour / Atta - 2 cups
  • Instant yeast  - 1 1/2 tsp
  • Salt - 1/2 Tbsp
  • Sugar - 1 Tbsp
  • Olive oil - 1 Tbsp
  • Warm water - 3/4 to 1 cup (adjust as required)
For Garlic Butter:
  • Butter, softened - 2 to 3 Tbsp
  • Garlic, finely grated / minced - 2 Tbsp

Zucchini & Sweet corn Quesadilla (With Whole Wheat Tortillas / Rotis)

Zucchini & Sweet corn Quesadilla

Quesadilla is a very easy recipe and perfect for busy weekday dinners. Also kids love them so much since it has Cheese in it :) It also makes a good lunch-box option. For this recipe, I  make tortillas from whole wheat flour, we can also use our regular rotis / chapathis.

So Cheesy!!!!
Ingredients:
  • Whole Wheat Tortillas / Rotis - 5 
  • Zucchini / Italian squash - 1 (2 cups sliced)
  • Sweet corn, steamed - 1 cup
  • Garlic, chopped - 1 Tbsp
  • Mozzarella cheese, shredded - 1/2 cup to 1 cup (use as required)
  • Olive oil - 2 tsp

Grilled Cheese Sandwich
Grilled Cheese Sandwich is a quick and easy recipe for Kids lunch box.
While packing for lunch, make sure to pack it once it gets completely cool down or else it might become soggy by the lunch time.

Cheesy Veggie Pasta with Homemade Pasta Sauce (Baked Version)

Servings: 1-2 Servings 

Cheesy Veggie Pasta
 Ingredients:
  • Pasta (Elbow / Shell Variety) - 1/2 - 3/4 cup
  • Home made Pasta Sauce - 3-4 tbsp
  • Mozarella Cheese, grated - 1/3 cup
  • Olive Oil - 1 tsp + 1 tsp
  • Capsicum, finely chopped - 3 tbsp (I used a mix of Red, orange and yellow capsicums)
  • Sweet corn kernels, boiled - 2-3 tbsp
  • Broccoli florets, blanched - 1/4 cup
  • Salt - as required
  • Water - for cooking pasta
Method:
  1. Cook pasta as per the package instructions; (Boil water; add pasta with little salt and cook for 8-10 mins until slightly soft yet crunchy enough to bite). Drain the excess water and keep aside
  2. Chop the veggies; Boil the sweet corn and blanch the broccoli florets; grate the cheese and keep all ready
  3. Heat a tsp of oil in a frying pan, add chopped capsicum pieces and fry for a min in medium high flame
  4. Now add the broccoli florets and saute for a min
  5. Then add the boiled corn and sprinkle little salt and saute
  6. Saute all the veggies for another 1-2 mins and switch it off
  7. Add 3-4 tbsp of Pasta sauce to the cooked and drained pasta
  8. Mix well until combined. adjust sauce quantity as per taste; Check for salt
  9. Add in the sauted veggies to the pasta and around 1 tbsp of grated cheese, mix well
  10. If preparing in stove top, cook the pasta along with veggies and cheese in low flame until the cheese melts and serve hot
  11. For Baking version, Preheat Oven to 350F for 10 mins; Grease a baking dish with a tsp of oil
  12. Transfer the Pasta into the greased dish
  13. Add the grated cheese over it 
  14. Bake in the preheated oven for 10-15 mins until the cheese melts and starts bubbling
  15. Once its done, Transfer to serving bowl and serve hot!
  16. If making for kids, we can also bake it in small sized baking dishes and serve as indivdual portions

Cheese stuffed Broccoli Cutlets

Cheese stuffed Broccoli Cutlet
Ingredients:
  • Broccoli, finely chopped / grated - 1 cup heaped
  • Potatoes - 1 no
  • Small Onion, finely chopped - 5-6 nos
  • Garlic, finely chopped - 3 pods
  • Corn starch / corn flour - 1-2 tbsp
  • Cheese - 1 slice or 2-3 cubes (as required)
  • Pepper Powder - to taste
  • Salt - to taste
  • Oil - 1 tsp + for toasting
  • Optional: Green chillies, finely chopped (can be avoided if making for kids)
Method:
  1. Boil the potatoes and grate / mash it well without any lumps
  2. Heat 1 tsp of oil in a pan, add finely chopped small onions and saute for 1 min
  3. Add the finely chopped garlic and saute till they turn golden brown; If using chillies, we can add at this stage and fry well
  4. Add the grated / finely chopped broccoli pieces along with required salt and saute in medium flame for few mins till it gets cooked
  5. Once the broccoli is done, switch off and allow the mixture to cool
  6. In a bowl, add the sauted broccoli and mashed potato, mix well
  7. Add 1 tbsp of corn flour to it and knead well to form a stiff dough. If required we can add another 1/2 tbsp of corn powder
  8. Make equal sized balls out of the kneaded dough; flatten one ball into a circular patty
  9. If using cheese slice, we can cut them into thin strips and roll it as below and place in the center of the patty; when using cubes, we can grate it and place the same
  10. After placing the cheese at the center, bring the sides inwards and form a ball
  11. Flatten it gently into circular cutlet shapes; repeat the same for the remaining dough
  12. Heat a pan and drizzle few drops of oil, place the patties and allow to toast for 1-2 mins in medium flame
  13. Then flip it over and cook the other side too with few drops of oil till it becomes golden brown
  14. Once its done, remove it and serve hot!

Cheese Straws

Servings: Yields around 2-3 dozens
 
Cheese Straws

 Ingredients:
  • Wheat flour / Atta - 2 1/4 cups + 1-2 tbsp for dusting
  • Butter, chilled - 1/2 cup
  • Cheese grated - 3/4 cup (tightly packed)
  • Milk, chilled - 1/2 cup+2 tbsp (Adjust as per consistency)
  • Pepper powder - 1 tsp
  • Chilly powder - 1 tsp (Optional)
  • Sesame seeds - 1 tbsp (Optional)
  • Salt - to taste
Method:
  1. In a bowl add in the wheat flour, pepper powder, salt and chilly powder; mix well
  2. Cut butter into cubes and add in to the flour mixture
  3. Using fingers rub the butter in the flour and mix well to form coarse bread crumb like texture
  4. Then add the grated cheese and mix
  5. By adding little amount of milk at a time, gently mix the flour mixture to form a dough like consistency
  6. Cover the bowl and keep it in refrigerator for atleast 10-15 mins
  7. Pre heat oven to 350 F
  8. Make equal sized balls and roll into a slightly thick circle in a dusted surface, sprinkle sesame seeds
  9. Using knife, cut the rolled dough into strips
  10. Place the strips in a lightly greased baking pan and bake for 12-15 mins
  11. After 7-8 mins of baking time, turn over the strips and bake till it becomes golden
  12. Allow to cool down in cooling rack, it will become crisp after cooling
  13. Store it in air tight container
