PB & J Pancake Bites / Whole wheat Strawberry Jam filled mini muffins with Peanut Butter spread

PB & J Pancake Bites

Peanut Butter and Jelly, or PB&J, is a classic combo that’s loved by many, especially kids in the US. On weekends, I like to switch things up and make pancakes, waffles, or muffins for breakfast. I’ve already shared some of my favorite pancake recipes with you, like these whole wheat pancake mini muffins and pancake doughnuts.

I’m experimenting with a new recipe for pancake muffins filled with fruit preserves or jam. It’s a tasty twist on the classic pancake! To make it even healthier, we can use homemade unsweetened peanut butter and fruit jam made with less sugar. What do you think?


These PB&J Pancake bites are made with whole wheat flour stuffed with strawberry preserves and topped with peanut butter spread. They’re absolutely delicious, super soft, and a hit with everyone!


Since we’re using fruit preserves, I’ve reduced the amount of sugar in the pancake batter, and we can even skip the sugar altogether!

For the eggless version, we can use the batter as in the pancake donuts recipe: Pancake Doughnuts

Ingredients:

Dry Ingredients: 
  • White Whole Wheat flour / Whole Wheat Pastry flour / Atta  - 1 cup
  • Baking powder -  1/2 tsp
  • Baking soda - 1/4 tsp
  • Salt - a pinch
Wet Ingredients:  
  • Egg - 1 no (at room temperature)
  • Butter milk - 1 cup (I used 3/4 cup thick yogurt + 1/4 cup water)
  • Sugar - 1 to 1 1/2 Tbsp (I used Organic unrefined sugar)
  • Unsalted Butter - 2 Tbsp, Melted

Whole Wheat Cheesy Garlic Bread sticks

Whole Wheat Cheesy Garlic Bread sticks
                               
Cheesy Garlic bread sticks are always kids favourite:) These garlic bread sticks are made with whole wheat flour and they are always great for a weekend dinner along with a soup. Also these are soft enough for the toddlers to munch on :)
Soft & Cheesy!!

 Ingredients:

For Dough:

  • Whole wheat flour / Atta - 2 cups
  • Instant yeast  - 1 1/2 tsp
  • Salt - 1/2 Tbsp
  • Sugar - 1 Tbsp
  • Olive oil - 1 Tbsp
  • Warm water - 3/4 to 1 cup (adjust as required)
For Garlic Butter:
  • Butter, softened - 2 to 3 Tbsp
  • Garlic, finely grated / minced - 2 Tbsp

Eggless Whole Wheat Banana Walnut Muffins (No white sugar)

Its very hard to resist a good muffin! Kids will love muffins for school snacks, breakfast and sometimes even for dinner:). 
                                  

But the store bought muffins are loaded with many unwanted ingredients and preservatives. As Moms, we always looking for healthy snacks for our kids. And also we can do anything to make them eat healthy:) 

                                  

I already had few muffin recipes in my blog and this one adds to my list. This is my always go-to recipe whenever I have ripe bananas.

                                 

In my cooking, I am not using refined, bleached white flour and now am trying to limit refined sugar and oil too. So here comes the healthy muffin loaded with all goodness of yummy bananas, whole grain flour, Organic unrefined virgin coconut oil, Organic coconut sugar and walnuts. This is also an eggless muffin.

                                          
 
Ingredients: 

Dry Ingredients:

  • Whole Wheat flour/Atta - 3/4 cup (I used white whole wheat flour)
  • Baking soda -1/2 tsp
  • Baking powder - 1/2 tsp
  • Cinnamon powder- 1/8 tsp
  • Salt - a pinch
  • Walnuts, chopped- 2-3 Tbsp

Crispy Oven roasted Broccoli with Indian Spices

Crispy Oven roasted Broccoli
Broccoli is a very healthy vegetable and its really difficult to make the kids to consume it. So I usually make parathas, cutlets or just roasting in the oven. This is a very easy one and yields crispy broccoli florets. Fresh broccoli florets are highly recommended to get really crispy ones and we can adjust the spices as per our preference. Addition of corn starch yields the crispiness and we can serve serve them as such as an appetizer or we can have it as a side for rice.

Ingredients:

  • Fresh Broccoli - 1 large head or 2 small heads
  • Olive Oil - 1 to 2 tbsp
  • Corn starch  - Around 1 and 1/2 tbsp
  • Garam Masala - about 1 tsp
  • Turmeric powder - 1/4 tsp
  • Red chilly powder  - 1/2 tsp
  • Salt  - to taste
Method:

  1. Pre heat oven to 400 or 425 F
  2. Wash the broccoli and cut into bite sized florets;Allow them to dry until there's no moisture left out or wipe out any water on it using paper towel (Moisture makes them soggy)

Spritz Christmas Cookies (Whole Wheat & Eggless Cookies)

Spritz Christmas Cookies

Spritz cookies are crisp buttery cookies specially made during the holiday season. These cookies doesn't have any levening agents like baking soda or baking powder. I adapted this recipe from here and I tried with both normal whole wheat  flour as well as whole wheat pastry flour. With pastry flour the cookies are crispier:) If we are not having cookie press, we can make small rounds with our hands or can also use pastry bags with star nozzle but I haven't personally tried it.


Ingredients:
  • Whole Wheat Pastry flour - 1 cup + 3 Tbsp (I used Organic whole wheat pastry flour)*
  • Butter - 1/2 cup, softened at room temperature
  • Powdered sugar or Icing Sugar - 1/2 cup + 3 Tbsp (I powdered the organic unrefined cane sugar)
  • Corn starch - 1/4 cup + 3 Tbsp
  • Milk - 2 Tbsp (at room temperature)

Pancake Doughnuts with Peanut butter chips (Eggless and Whole wheat)

Pancake Doughnuts with PB chips
Pancakes are one of the most common breakfast items in US and mostly made from All purpose flour (refined flour).Since I wont use the refined flour for anything, i tried using our normal wheat flour and it turns out to be super soft and delicious. I have already posted a couple of pancake recipes.



This recipe is adapted from my eggless whole wheat pancake recipe and I tried baking them in doughnut pan.These will be surely a hit among kids due to its shape and ofcourse who will tell no to such an healthy doughnuts. Also we can make varieties by adding different flavour and toppings. 

Also this can be packed for kids lunch or snack box. If we want to serve hot with syrup or honey we can reduce the sugar quantity to half. It tastes yummy on its own too:)

Ingredients:

Dry Ingredients: 

  • Whole Wheat flour/ Atta - 1/2 cup (I also tried with white whole wheat flour)
  • Baking powder - 1 tsp
  • Cinnamon powder - 1/2 tsp
  • Salt - a pinch
  • Sugar - 1 tbsp (can be reduced if serving with syrup or honey)

Coconut Macaroons (Eggless Version)

Servings: yields around 2 dozen macaroons


Eggless Coconut Macaroons
This is an eggless version of coconut macaroons and those who love coconut will surely enjoy them:) Also this is an easy version with minimal ingredients, yeah we just need three ingredients in total! Isn't it awesome? Here I used sweetened coconut flakes since that what I had in my hand. So the macaroons were on the sweeter side, if we need less sweeter version, we can replace it with unsweetened flakes. Ok let's start baking macaroons:)


Ingredients:
  • Coconut flakes - Around 2 to 3 cups (I used sweetened flakes)
  • Condensed milk  - Around 1/2 to 3/4 cup (Sweetened condensed milk)
  • Vanilla essence  - few drops
Note: The actual quantity of coconut flakes and condensed milk may vary; adjust as per requirement until we get the right consistency

Method:
  1. Preheat the oven to 325 F for 10 to 15 mins and line a baking sheet with parchment paper
  2. If the coconut flakes are little big, we can use as such or we can grind it to small flakes and use them instead. It purely depends on our preference

Whole Wheat Pancake Mini Muffins

I have already posted an eggless whole wheat pancake recipe here and this one uses egg. During weekend mornings, it will be bit tired (or lazy :)) to stand before stove while making pancakes. To make it easier i tried baking them in mini muffin tins and it came out really well. I already tried an eggless version which I used to prefer on days when I wont eat eggs but didnt take pictures; so havent posted yet:)

These will be surely a hit among kids due to its size and ofcourse who will tell no to such an yummy mini bites and also made from whole wheat flour. Also we can make varieties by adding different flavour and toppings.

Whole Wheat Banana Chocolate Cake (Eggless & Butterless)

Cooking Time: 25-40 mins
Servings: yields 1 big square cake or 2 loaves


WW Banana Chocolate Cake
Ingredients: 

Dry Ingredients:

  • Whole Wheat flour - 2 cups
  • Cocoa Powder - 2/3 cup
  • Baking soda - 1 1/2 tsp
Wet Ingredients:
  • Banana, ripen - 4 nos (long variety)
  • Olive Oil - 4 tbsp
  • Brown Sugar - 1- 1 1/2 cups, packed (If we dont want to be sweet, we can use just 1 cup as I used here)
  • Vanilla extract - 1 tsp
  • Hot Water (Not boiling, just hot) - 1 1/2 cups
  • Lime / Lemon Juice - 2  tsp
Method: 
  1. Pre-heat oven to 350 F for 10 mins
  2. Grease the baking pan and keep it ready
  3. In a sieve, add the wheat flour, Baking soda and Cocoa powder. Sieve the dry ingredients into a wide plate/bowl
  4. In another large mixing bowl, mash the bananas well
  5. Add the oil and whisk well 
  6. Add the Brown sugar and beat well
  7. Add Vanilla extract and mix well
  8. Add warm water and mix to form a uniform mixture
  9. Then add the lime juice into it and mix 
  10. Add the dry flour mix into the wet mixture and blend well without any lumps
  11. Pour the batter into the baking trays
  12. Bake in preheated oven for about 30-40 mins or until its done (can be checked by using tooth pick method). Since I used small cake pans, mine got done in 25 mins
  13. Once its done, remove from the oven and allow to cool for 5 mins in the pan
  14. Then transfer them to cooling rack and allow to cool
  15. Slice and Serve hot!

Eggless Whole Wheat Marble Cup Cakes (Vanilla & Chocolate Flavour)

Marble / Swirling / Zebra Cup cakes are nothing but  cup cakes with both vanilla and chocolate flavour. This is an eggless version and these cup cakes are really very soft and crumbly. Kids will enjoy it for sure and also its made of whole wheat flour:)
WW Marble Cup Cakes
 Ingredients:

Dry Ingredients:
  • Whole Wheat flour - 1 1/4 cup
  • Milk powder - 3 tbsp
  • Baking Powder - 2 tsp
  • Baking soda - 1/2 tsp
Wet Ingredients:
  • Cold Butter - 1/2 cup
  • Powdered sugar - 3/4 cup, packed
  • Milk* - 1 cup (Should be warm)
  • Vanilla extract - 1 tsp
Other Ingredients:
  • Cocoa Powder - 2 tbsp dissolved in 2 tbsp of hot water
*Here I used White Whole Wheat flour, if using Atta we might need additional 1-2 tbsp of milk

Method:
  1. Pre heat oven to 350°F
  2. Grease the muffin pans / line with muffin liners
  3. In a sieve add the dry ingredients (Wheat flour, baking soda, baking powder and milk powder) and sieve them into a bowl and keep it ready
  4. In a mixing bowl, add the chopped cold butter and powdered sugar and beat it well till the sugar gets dissolved and become creamy texture

  5. To this add the remaining 1 cup of warm milk and beat well
  6. To this add the vanilla extract and mix well
  7. Now add the sifted flour into the wet ingredients and gently mix it up to form a batter
  8. In a small bowl dissolve 2 tbsp of cocoa powder in equal amount of hot water
  9. Divide the batter into two equal parts; one for vanilla flavour and the other for chocolate flavour
  10. For vanilla layer, we will just keep the prepared batter as such
  11. For chocolate layer, add the dissolved cocoa powder mix into the other half of the batter and mix well to combine
  12. In the muffin cups, add 1 spoon of vanilla batter
  13. Then add 1 spoon of chocolate batter
  14. Again add 1 spoon of vanilla and followed by chocolate batter

  15. We can bake as such to get the marbled effect
  16. If we want, we can also make swirling pattern; using a tooth pick, just swirl the batter gently so that we can view a beautiful swirl pattern

  17. Bake for around 20-30 minutes (depend on the size of the muffins), or until toothpick inserted in center comes out clean 

  18. Cool for about 10 minutes in the pan and then remove from pan to cooling rack
    So soft!!!
