Whole Wheat Cheesy Garlic Bread sticks

Servings: 3-4 servings

Whole Wheat Cheesy Garlic Bread sticks
                               
Cheesy Garlic bread sticks are always kids favourite:) These garlic bread sticks are made with whole wheat flour and they are always great for a weekend dinner along with a soup. Also these are soft enough for the toddlers to munch on :)
Soft & Cheesy!!

 Ingredients:

For Dough:

  • Whole wheat flour / Atta - 2 cups
  • Instant yeast  - 1 1/2 tsp
  • Salt - 1/2 Tbsp
  • Sugar - 1 Tbsp
  • Olive oil - 1 Tbsp
  • Warm water - 3/4 to 1 cup (adjust as required)
For Garlic Butter:
  • Butter, softened - 2 to 3 Tbsp
  • Garlic, finely grated / minced - 2 Tbsp

Paneer-Capsicum Stuffed Bread Rolls (Baked)

Servings: yields 10-11 rolls

 
Baked Bread Rolls with Paneer-Capsicum Stuffing
 Ingredients:
  • Bread slices - 10-11 nos (Sandwich Bread Slices)
  • Ghee / Butter - For Toasting
For Stuffing: 
  • Paneer, crumbled - 1 cup
  • Small Onion, finely chopped - 4-5 nos
  • Capsicum, finely chopped - 1/3 cup
  • Tomato, finely chopped - 1 no
  • Ginger, grated - 1/2 tbsp
  • Garlic, finely chopped - 2-3 cloves
  • Green chilly, finely chopped - 1 no (Can be avoided if making for kids)
  • Butter / Oil - 1 tsp
  • Cumin seeds - 1/2 tsp
  • Coriander powder - 1/4 tsp
  • Turmeric powder - 1/4 tsp
  • Pavbhaji Masala Powder (Home made) - 1/4 tsp (can be replaced with Garam Masala)
  • Coriander leaves, finely chopped - 2-3 stalks
  • Salt - to taste
Method:
  1. Heat Butter / Oil in a pan, add cumin seeds and allow to splutter
  2. Add finely chopped onions and saute for 1 min
  3. Add finely chopped garlic and grated ginger, saute for 2 mins. If adding green chilly, we can add now
  4.  Add capsicum and saute for 1-2 mins
  5. Now add finely chopped tomato and saute for few mins till it turns soft and oil starts separating
  6. Add Turmeric, Coriander, Pav Bhaji Masala powders and required salt; mix well
  7. Now add the crumbled paneer and saute well for a min till it gets blended with masala and switch it off

  8. Add chopped coriander leaves and allow it to cool down a bit
  9. For this, its good to use atleast 3-4 days old bread so that they are easy to roll than the fresh breads
  10. Take the breads, trim off the brown edges and keep it ready
  11. With the help of chapathi roller, gently roll each bread slice
  12. Add around 1-2 tbsp of stuffing in one end
  13. Then roll it up so that it gets covered
  14. Just add a drop of water to the edges and seal it completely on all the sides
  15. Follow the same for the rest of the bread slices and keep it ready
  16. If making in stove top, heat a pan and drizzle few drops of ghee / butter / oil and toast the rolls on both sides until they turn golden brown; Transfer to serving plate and serve hot
  17. If we are baking the rolls as I did, Preheat the Oven to 400F for atleast 10 mins
  18. Brush few drops of Ghee / melted butter over the prepared rolls

     
  19. Place them all in an ungreased baking tray
  20. Bake it in preheated oven for around 10-12 mins until they turn golden brown. Flip them over halfway through for even baking
  21. Once it done, transfer to serving tray and serve hot
  22. Kids will have as such since it will be very crispy outside, if needed we can serve with any chutneys or tomato sauce

Banana Bread - Whole Wheat & Eggless

Servings: 1 loaf


Banana Bread - Eggless Whole Wheat


Ingredients:


Dry Ingredients:

  • Wheat flour / Atta - 1 3/4 cups
  • Baking powder- 2 tsp
  • Cinnamon powder - 1/2 tsp
  • Salt - 1/2 tsp
Wet Ingredients: 
  • Ripe Bananas-  3 nos (Long yellow variety)*
  • Brown Sugar - 1/3 cup**
  • Olive oil - 1/4 cup
  • Curd - 1/4 cup 
  • Vanilla extract- 2 tsp
 Optional:
  • Coconut flakes - 2 tbsp + 1 tbsp (I used sweetened flakes)
  • Or Chocolate Chips
*Bananas should be very well ripen for Banana Breads
**Since we are using over ripe bananas, the sweetness was more so I used just 1/3 cup of sugar, we can adjust as per the natural sweetness in bananas

 Method:
  1. Preheat oven to 350 F degrees and grease the loaf pan with oil
  2. Sift and Mix all the dry ingredients in a bowl 
  3. Take all the wet ingredients in a blender and mix well to form a smooth puree
  4. Add the puree into the flour mix and mix gently
  5. If using coconut flakes / chocolate chips, fold in 2 tbsp of it into the batter (We can also mix the coconut flakes with 1 tsp of atta before folding in)
  6. Pour the batter into the greased pan

  7. Sprinkle the remaining 1 tbsp of coconut flakes over the batter
  8. Bake the bread for 35-45 minutes or until toothpick inserted in center comes out clean
  9. Remove the bread from the oven and allow it to cool for 10 minutes before turning it out of the pan onto a rack to cool completely
  10. Once it becomes warm, slice and serve

Whole Wheat Bread (Eggless)

Cooking Time: 25 mins + 75 mins waiting time
Servings: yields 1 loaf

Whole Wheat Bread
Ingredients:
  • Wheat flour / Atta - 3 cups
  • Instant yeast - 1 tsp
  • Salt - 1 tsp
  • Sugar - 3 tsp
  • Butter - 2 tbsp (melted)
  • Curd / Yogurt- 2 tbsp 
  • Water - 1 1/4 - 1 1/2 cups (Adjust as per requirement)
  • Milk - 1 tsp
Method:
  1. In a bowl, add the wheat flour, salt, Instant yeast and sugar; mix well
  2. Add butter and curd into it and mix to form crumbly texture
  3. By slowly adding required water, knead to a smooth and soft dough. At this point the dough would be little stickier than our normal chapathi dough
  4. Cover it with a damp kitchen towel and a lid; rest it for half an hour
  5. After half an hour, the dough should have been raised; slightly punch the dough and knead well to form a thick log to fit the size of the loaf pan
  6. Grease the loaf pan with little butter / ghee and place the dough inside it and cover it with lid; let it stand for another 40 mins
  7. By this time, the dough should have raisen well
  8. While waiting for the bread to rise, preheat the oven at 425 F for 15 mins
  9. Make few slits on the loaf and brush 1 tsp of milk over it
  10. Bake in the oven for about 25 mins or or until toothpick inserted in center comes out clean
  11. Remove the bread from the oven and allow it to cool for 10 minutes before turning it out of the pan onto a rack to cool completely
  12. Once it became warm, slice and serve  or can be refrigerated for 2-3 days

Spinach-Paneer Sandwich

Servings: yields 6 sandwiches
Spinach-Paneer Sandwich
Ingredients:
  • Bread slices - 12 nos
  • Butter - 1-2 tbsp
For Stuffing:
  • Paneer, cubed - 3/4 cup
  • Spinach, chopped - 3/4 cup (Here I used Frozen spinach)
  • Onion, finely chopped - 1 no (Small sized)
  • Oil - 1 tsp
  • Ginger Garlic paste- 1 tsp
  • Coriander powder - 1/2 tsp
  • Turmeric powder - 1/4 tsp
  • Garam masala - 1/2 tsp
  • Chilly powder - 1/2 tsp (Adjust as per spice level)
  • Salt - to taste
Method:
  1. Wash and chop spinach and cut paneer into bite sized pieces

  2. Heat oil in a pan, add Onions and saute well till it becomes translucent
  3. Add the ginger-garlic paste and saute till the raw smell goes off
  4. Add in the chopped spinach along with required salt and the dry masala powders (Turmeric, Coriander, Chilly and Garam Masala)
  5. Saute for 3-5 mins until the spinach gets cooked
  6. Add in the paneer cubes; mix well and switch off
  7. Spread butter on one side of the bread slices
  8. Place the prepared stuffing in one bread slice with the butter side facing down and keep another slice over it with butter side facing up
  9. Toast it in sandwich maker / grill / stovetop pan till the bread slices get toasted well
  10. Cut in half and serve hot!
