Foxtail millet-Wheat Coin Pancakes

Foxtail millet is a powerhouse of nutrients! It’s packed with protein, fiber, vitamins, and minerals like iron, calcium, magnesium, and B vitamins. Foxtail Millet
Ingredients:

Dry Ingredients:
  • Foxtail millet flour - 1/4 cup
  • Whole wheat flour - 1/4 cup (I used white whole wheat flour /whole wheat pastry flour)
  • Cane sugar - 1-2 tsp
  • Baking soda - 1/8 tsp
  • Salt- a pinch
Wet Ingredients:
  • Milk -1/2 cup
  • Butter, melted - 1.5 tsp
  • Water - as needed (depends on the consistency)
  • Vanilla Extract - 1/4 tsp

Method:

  • Sieve the dry ingredients into a bowl.
  • Add the wet ingredients one by one.
  • Gently mix everything together until you have a smooth batter.
  • If the batter is too thick, add a little water.
  • Heat a dosa tawa (griddle) over medium heat.
  • Pour the batter onto the pan in the shape of a coin.
  • Flip the pancakes over when the top starts to bubble.
  • Cook the other side until it’s also golden brown.
  • Remove the pancakes from the pan and repeat the process with the remaining batter.
  • Serve the pancakes warm with butter and your favorite toppings, like honey or maple syrup.

Banana Chocolate chip Pancakes (Eggless, Whole wheat & Vegan option included)

Pancakes are always the favourite breakfast not only for the kids but for the entire family.  I have already posted few pancake recipes in my blog and all those were made from whole grain flour only, strictly no to the refined white flour.

Nowadays, whenever I have got over ripen bananas, either I prepare these banana muffins or banana bread or pancakes.

Banana chocolate chip pancakes - These are eggless pancakes and made with whole wheat flour. Since banana and milk are not compatible foods together, I have used coconut milk here instead of regular milk. We can use unsweetened coconut or almond milk; if we are not having any of these, we can just grind some coconut and extract milk and use it. We can also use plain water but the taste will differ.
            
Dairy-free & Vegan option: This can easily be adapted to a vegan recipe by replacing the chocolate chips with vegan/dairy free chocolate chips or even chopped nuts and we can use coconut oil for toasting instead of butter.

  • Baking powder - 2 tsp
  • Cinnamon powder - 1/2 tsp

Pancake Doughnuts with Peanut butter chips (Eggless and Whole wheat)

Servings: yields 6 doughnuts

Pancakes are one of the most common breakfast items in US and mostly made from All purpose flour (refined flour).Since I wont use the refined flour for anything, i tried using our normal wheat flour and it turns out to be super soft and delicious. I have already posted a couple of pancake recipes.



This recipe is adapted from my eggless whole wheat pancake recipe and I tried baking them in doughnut pan.These will be surely a hit among kids due to its shape and ofcourse who will tell no to such an healthy doughnuts. Also we can make varieties by adding different flavour and toppings. 

Also this can be packed for kids lunch or snack box. If we want to serve hot with syrup or honey we can reduce the sugar quantity to half. It tastes yummy on its own too:)

Whole Wheat Pancake Mini Muffins

Servings: yields around 24 mini muffins + 5 small muffins

I have already posted an eggless whole wheat pancake recipe here and this one uses egg. During weekend mornings, it will be bit tired (or lazy :)) to stand before stove while making pancakes. To make it easier i tried baking them in mini muffin tins and it came out really well. I already tried an eggless version which I used to prefer on days when I wont eat eggs but didnt take pictures; so havent posted yet:)

These will be surely a hit among kids due to its size and ofcourse who will tell no to such an yummy mini bites and also made from whole wheat flour. Also we can make varieties by adding different flavour and toppings.

Whole Wheat Eggless Pancakes

Pancakes are one of the most common breakfast items in US and mostly made from All purpose flour (refined flour), this version i tried using our normal wheat flour and it turns out to be super soft and delicious. They usually have it with maple / chocolate syrups  drizzled over fresh fruits on the pancakes. But we would like to have with honey (natural food :)) and fruits. Kids will enjoy it much:)

Ingredients:

Dry Ingredients:
  • Wheat flour/ Atta - 1 cup
  •  Baking powder - 2 tsp
  • Cinnamon powder - 1 tsp
  • Salt - a pinch
  • Sugar - 1 tbsp 
Wet Ingredients:  
  • Milk - 1 1/4 cup
  • Melted Butter - 3 tbsp
  • Vanilla extract - 1 tsp
 For Toasting:
  •  Butter - 1 tbsp
For Serving: (Own choice)
  • Honey
  • Fresh fruits (Banana, strawberry)
 Method: 
  1. Mix the dry ingredients in a wide bowl
  2. In another bowl, mix the wet ingredients (Milk should be at room temperature)
  3. Add the wet mixture into the flour mix and gently fold it so that it gets mixed (Dont overmix it)
  4. The batter consistency will be bit thick (than our normal Idli batter) but not too thick; if needed add 1-2 tbsp of water / milk and mix
  5. Rest it for 10 mins
  6. Heat the pan in medium heat, once it gets hot (not too hot) spread little butter on it and pour a laddle full of batter and spread gently
  7. Pancakes are supposed to be on thicker side so just give a little spread and not too thin like our dosa
  8.  Once bubbles appear on the top side, flip it over and allow to cook on the other side
  9. Once done, transfer to plate and serve hot with honey & fresh fruit slices
