Pudhina Chutney for Rice

Servings: 2-3 servings

Pudhina Chutney for Rice
 Ingredients:
  • Pudhina / Mint leaves - 1 to 2 cups, loosely packed
  • Fresh coconut - 1/2 cup
  • Small Onions - 6-8 nos
  • Channa Dhal - 1/2 tbsp
  • Urad Dhal - 1/2 tbsp
  • Red Chillies - 1-2 nos (adjust per required spice level)
  • Cumin Seeds - 1/2 tsp
  • Coriander seeds - 1/2 tsp
  • Pepper - 1/4 tsp
  • Tamarind - a small piece
  • Salt - to taste
  • Oil - 1 tsp 
Method:
  1. Heat 1 tsp oil in a pan, add Channa & Urad Dhals fry till they turn golden brown. Then add the red chilly, tamarind followed by cumin seeds and pepper; fry for 30 secs
  2. Add small onions and fry for 1-2 mins
  3. Switch off the stove and add the mint leaves and saute till it shrinks in volume

  4. Add required salt and coconut gratings  
  5. Grind the mixture with required water to a chutney like consistency and transfer to serving bowl
  6. Serve with hot Rice or even with Idly / Dosa
