Pudhina Chutney |
- Pudhina / Mint leaves - 2 cups
- Coconut, grated - 1 cup
- Channa Dhal - 1 tbsp
- Urad Dhal (Split) - 1 tbsp
- Red Chilly - 2-3 nos (adjust per taste)
- Cumin Seeds - 1 tsp
- Pepper - 1/4 tsp
- Ginger - 1/2 inch piece (Optional)
- Tamarind paste - 1/4 tsp
- Salt - to taste
- Oil - 1 tsp
- Heat 1 tsp oil in a pan, add Channa & Urad Dhals fry till they turn golden brown. Then add the red chilly followed by cumin seeds and pepper; fry for 30 secs
- Add ginger pieces and fry for a min
- Switch off the stove and add the mint leaves and saute till it shrinks in volume
- Add required salt, tamarind paste and coconut gratings
- Grind the mixture with required water to a chutney like consistency and transfer to serving bowl
- Serve with hot Idly / Dosa
- If needed, we can do tempering but not necessary
