Vegetable stuffed Idli

Vegetable stuffed Mini Idlis
Idli is one of the popular and healthiest Indian dish. In South Indian homes, we usually stock up Idli and Dosa batter in our refrigerator. To make it more interesting for the kids, I usually stuff vegetables and make these Stuffed Idlies.

So soft and Yummy!
These are tasty, easy and more healthy with the added veggies. Kids too love these Idlis and it can be a great finger food for them.

If we are making mini stuffed idlis, we can even toss them up in idli podi and serve with skewers :)

Veg Stuffed Mini Idlis
Ingredients:
  • Idli batter - 3 cups
  • Big Onion - 1, finely chopped
  • Tomato - 1 big, pureed
  • Ginger-Garlic paste - 1/2 Tbsp
  • Carrot - 1 big, finely chopped
  • Green beans - 10, finely chopped
  • Green peas (I used frozen peas) - 1/3 cup
  • Sambar powder - 1/2 Tbsp (adjust to taste)
  • Turmeric powder - 1/4 tsp
  • Chilli powder - as required (Optional)
  • Salt - to taste
  • Cooking oil - 2 tsp
  • Mustard seeds -1/2 tsp
  • Split Urad dal - 1 tsp
  • Curry leaves - few  (Optional)
  • Coriander leaves - 1 Tbsp, finely chopped
Method:
  • Heat oil in a pan, once it gets hot add mustard seeds followed by urad dal and curry leaves
  • Add the finely chopped onion and saute well until it turns pink
  • Add ginger-garlic paste and saute for a min. We can add grated ginger and garlic if we are not having the ground paste
  • Grind the tomato into fine puree and add the tomato puree once the raw smell of ginger and garlic went off. Saute well for 2 mins
  • Add the finely chopped carrot, beans and frozen green peas; mix well
  • Add Sambar powder, turmeric powder and required salt, mix well. If using chilli powder, we can add that too.
  • Sprinkle water, cover and cook the veggies for few mins until they get cooked
  • Once the veggies got cooked, check for salt, add the coriander leaves and switch off the stove. Allow it to cool for sometime
  • Heat water in the Idli steamer; In Idli plate add a little Idli batter for about 1/4th of the Idli mould
  • Place 1 -2 Tbsp of the prepared vegetable mix
  • Add little more batter over the veggies so that they got covered
  • Place the plate inside the steamer and cook for 12-15 mins or until it gets cooked (Regular sized Idli). If using mini idli mould, cook for about 5 mins
  • Once they got cooked, switch off the the stove and rest it for 5 mins
  • Then remove the idlis from the plate 
  • Serve hot with Chutney. We like it with fresh Coconut chutney :)
