Pineapple Fried Rice (Vegetarian & without soy sauce)

Pineapple Fried Rice

Pineapple fried rice is very easy to make, healthy and a filling meal. This is so tasty and can be had on its own; no need of any side dish. I have not used eggs and hence its a perfect vegetarian fried rice :)
Here I have not used soy sauce or any other sauces; but used little apple cider vinegar. Apple cider vinegar gives a nice flavour for the fried rice. We can make this fried rice with out vinegar too. I have used curry powder here but that can be replaced with garam masala.

While making for kids, we can avoid chillies and can use more cashews and raisins as per their preference. If we want richer, we can roast the nuts and raisins in ghee and add at the end and also we can use butter instead of oil.

Ingredients:
  • Basmati rice - 1 cup
  • Pineapple - 2 cups, chopped
  • Spring onion - 1/2 cup, green and white chopped separately
  • Bell pepper - 1/2 to 3/4 cup, chopped
  • Cashews - 2-3 Tbsp, halved
  • Raisins - 2-3 Tbsp
  • Garlic - 1-2 Tbsp, finely chopped
  • Green chilli - 2, slitted (can be avoided while making for kids)
  • Mace - 1 small strand
  • Star anise - 1 small
  • Curry powder - 1/2 Tbsp 
  • Salt - to taste
  • Pepper powder - to taste
  • Apple Cider Vinegar - 1 Tbsp
  • Extra virgin olive oil - 1-2 Tbsp
Here I used Curry Powder, we can use Garam masala or any preferred curry masala

Method:
  • Wash and soak 1 cup of rice for atleast 20 mins and then cook as usual in such a way the grains are separate. Once its done, spread it in a plate and allow it to cool
  • Heat 1 Tbsp of oil in a wide pan and once it become hot, add the mace strand, star anise, chopped garlic and slitted green chillies. I like the flavour of mace and star anise in fried rice so am using it here
  • Saute in medium flame for 30 secs until they turn aromatic
  • Add the chopped bell pepper and saute for a min. Here I have used green and red bell peppers. Bell peppers need to be having the crunchiness, dont saute them until they become soggy
  • Add the white part of the spring onion and saute for 1 min
  • Add the cashews and raisins, fry until cashews become golden and raisins puffed up
  • Now add the chopped pineapple pieces and fry in a medium high flame for 2 mins
  • Add 1 Tbsp of apple cider vinegar and saute well
  • Then add the curry masala and mix well
  • Add required salt and black pepper powder, mix well in medium flame
  • Add the cooked and cooled rice, mix gently until they get mixed up. If needed, we can add little olive oil
  • Add the green part of the spring onion and mix well
  • Switch off the stove

  • Serve warm!
Pineapple Fried Rice Ready to be served!
