Mixed Veg Paniyaram

Kids love to have bite sized foods. Paniyaram is always a hit among the kids. We can serve these for breakfast or even as an evening snack.

Mixed Veg Paniyaram

I had already posted Chola Paniyaram recipe in my blog. And this one is using left over Idli dosa batter and to make it more healthy we can add mixed veggies.

Ingredients:

  • Idli/Dosa batter - 2 cups
  • Big Onion - 1, finely chopped
  • Carrot - 1 big, finely chopped
  • Green beans - 10, finely chopped
  • Green chilly, split - as needed
  • Salt - to taste
  • Cooking oil - as needed
  • Mustard seeds -1/2 tsp
  • Split Urad dal - 1 tsp
Method:
  • Finely chop the onions and the veggies
  • Heat oil in a pan, once it gets hot add mustard seeds followed by urad dal 
  • Add the split green chillies (if using) and finely chopped onion and saute well until it turns pink
  • Add the finely chopped carrot, beans and mix well
  • Add required salt, mix well 
  • Sprinkle water, cover and cook the veggies for few mins until they get cooked
  • Once the veggies got cooked, check for salt and switch off the stove. Remove the green chillies
  • Add the sauted veggies to the idli batter 
  • Mix well together
  • Heat Paniyaram pan, add few drops of oil in each hole
  • Once the pan becomes hot, add a spoon of batter into each hole
  • Reduce the flame to medium and cover the pan with lid; allow to cook for 1-2 mins
  • Then flip it over and allow to cook the other side without covering with lid
  • Once its done, remove from the pan and repeat the same for the remaining batter

  • Serve hot with Sambar and chutney! Peanut / Coconut Chutney with Paniyaram is always a great combination:)
