Quesadilla: A quesadilla is a Mexican dish and type of taco, consisting of a tortilla that is filled primarily with cheese, and sometimes meats and spices, and then cooked on a griddle. Traditionally, a corn tortilla is used, but it can also be made with a flour tortilla, particularly in northern Mexico and the United States (Source: Wikipedia)
Quesadilla is a very easy recipe and perfect for busy weekday dinners. Also kids love them so much since it has Cheese in it :) It also makes a good lunch-box option. For this recipe, I make tortillas from whole wheat flour, we can also use our regular rotis / chapathis.

Ingredients:











- Whole Wheat Tortillas / Rotis - 5
- Zucchini / Italian squash - 1 (2 cups sliced)
- Sweet corn, steamed - 1 cup
- Garlic, chopped - 1 Tbsp
- Mozzarella cheese, shredded - 1/2 cup to 1 cup (use as required)
- Pepper, ground - 1/2 tsp (adjust as required)
- Italian seasoning - 1/2 tsp
- Chilli flakes - to taste
- Salt - to taste
- Oil - for toasting
For Tortillas:
- Whole Wheat flour - 2 cups
- Oil - 2 Tbsp
- Salt- to taste
- Warm Water - as required
Method:
- Prepare Whole wheat tortillas / Rotis: In a wide bowl, add wheat flour and required salt, mix well and knead into a smooth soft dough by gradually adding warm water. Finally add 2 Tbsp of oil and knead well. Keep aside for atleast 30 mins. Then take a ball of dough, roll it into a thin circle and cook it on a heated tawa. Once it get half cooked, flip it to the other side and cook for few seconds until bubbles start to appear. Then remove it and place it in a plate. Repeat the same and stack the rotis and keep covered.
- Wash the Zucchini, trim the ends, cut it lengthwise and make thin slices. (No need to peel it) Steam cook the sweet corn and keep it ready

- Heat a skillet, add oil and once it becomes hot add the chopped garlic and saute for a min

- Add the zucchini slices and saute in a medium high flame for 2-3 mins

- Add the steam cooked corn and mix well

- By now, zucchini should have cooked but still retain its crunchiness. We dont want very soft / overcooked zucchini
- Sprinkle salt, pepper and chilli flakes, give a quick mix

- Sprinkle Italian seasoning and mix well

- Switch off the stove, transfer it to a container and allow it to cool a little bit
- Once it gets cooled down, add the grated cheese to the veggies and mix well

- Heat the tawa and while its heating, assemble the Quesadilla.
- Take a tortilla / roti, place about 2-3 Tbsp of veggie-cheese mixture in one half of it

- Fold the other half and make a half-moon shape
- Grease the hot tawa and place the arranged quesadilla on it and cook it in a medium flame for 30-45 secs
- Carefully flip it over and cook the other side for 30-45 secs

- Smear with oil while toasting to get crispy texture
- Once done, take it off and place it on a plate

- Cut it into half and serve warm along with guacamole or salsa.

- Repeat the same for the remaining tortillas
