Spicy Cornflakes Mixture (No-deep fry Mixture)

Spicy Cornflakes Mixture!

Let's Spice up the cornflakes!!!!

This is a very easy and quick mixture we can make using the breakfast cereal - corn flakes. We usually wont eat cereals for breakfast but at time we buy the unsweetened and unflavored corn flakes just to make this mixture :)

Mixture without Deep frying

There are no hard and fast rules for this recipe, we can alter the ingredients and flavors as per our taste. We can also add other nuts and seeds as per our liking.

Crispy Corn flakes Mixture!

When I make for kids, I prefer to add the ghee and cashews since it gives a good flavour to it.

Ingredients:
  • Corn flakes - 4 cups (unsweetened & unflavored)
  • Raw Peanuts - 1/2 cup
  • Roasted gram/Dalia/Pottukadalai - 1/4 cup
  • Cashews, broken - 2 Tbsp
  • Raisins - 2 Tbsp
  • Salt - to taste
  • Red chilly powder - to taste
  • Curry leaves - 2-3 sprigs
  • Oil - 1-2 Tbsp 
  • Ghee - 1-2 tsp (Optional)
  • Garlic - 1-2 cloves (Optional)
  • Sugar - 1 tsp (Optional)
  • Chat Masala powder - to taste (Optional)
Method:
  • Pre-heat oven to 350 F and bake the corn flakes for 3-5 mins until it becomes crispy. This step is completely optional
  • Heat 1-2 Tbsp of oil in a wide pan and add the peanuts to it, roast in low-medium flame until they get roasted
  • Add the Roasted gram / Pottukadalai to it and roast it until they turn golden brown
  • Add Curry leaves to it and fry until they become crispy. If using garlic, we can add now
  • Add the cashew pieces and raisins to it and fry for a min. If preferred, we can separately fry the cashews and raisins in ghee and add to it
  • Once everything gets roasted well, add the red chilly powder, required salt, sugar and mix together
  • Then add the Cornflakes and mix well
  • If needed we can sprinkle Chat Masala for flavour
  • Once they get cooled down, store it in air tight container
  • For Low Fat Version: Bake or dry roast the cornflakes, peanuts, Pottukadalai, cashews separately; then do the tempering in 1 tsp of oil and mix together
