Kambu Koozh is usually prepared with whole millet (Kambu) and due to the unavailability of kambu here, I tried with ready made flour available in stores. Even though it is not fresh as we do with Kambu, for sure it's tasty and refreshing

Ingredients:
- Pearl Millet / Bajra / Kambu flour - 1/2 cup
- Buttermilk - 2 cups (If using curd, beat 1 cup curd with 1 cup of water)
- Salt - to taste
- Water - 1 1/2 cups
- Small onions, finely chopped - 4-5 nos
- For Tadka / Seasoning (optional) - Oil- 1 tsp, mustard - 1/2 tsp, red / green chillies - to taste
- Add Kambu flour and water in a wide bowl, mix well without any lumps. You can use wired whisk for uniform mixing
- Heat the mixture in medium flame and allow to cook, by stirring continuously
- Once it gets cooked, it becomes thick. Make sure you stir in between to avoid any lump formation
- Add required salt and allow to cool (Stirring helps to avoid layer formation)
- Meanwhile if you're using curd, beat it well with equal amount of water and kept aside
- Once it gets cooled, add the buttermilk / beaten curd to the cooked flour and stir well
- Add the chopped small onions and serve
- If you like seasoning, you can do the tadka with mustard seeds and chillies
- This can also be refrigerated and served chill
