Mango Cake (Eggless Atta Cake)

Servings: 1 Loaf

Ingredients:
Mango Cake
  • Wheat Flour / Atta - 1 cup
  • Fine Rava - 1/2 cup
  • Mango puree - 1 1/4 cup
  • Sugar - 3/4 cup
  • Curd- 1/4 cup
  • Olive Oil / any Cooking oil - 2 Tbsp
  • Walnuts chopped - 3 Tbsp
  • Baking soda - 1/2 tsp
  • Baking powder - 1 tsp
  • Salt - a pinch
  • Cardamon powder - 1/2 tsp
Method:
  1.  Pre-heat oven to 350F and grease the cake / loaf pan
  2.  In a wide bowl, mix the atta, baking powder, baking soda, salt and sieve it to get it a uniform mixture. To this add in the fine rava and mix well
  3. Puree the mango pieces in mixie or blender into  smooth puree, add in sugar, curd, cardamon powder, oil and blend well until combined
  4. Add in the wet ingredients into the dry flour mix and gently combine till it mixed
  5. Fold in the chopped walnuts
  6. Add the batter into the loaf pan and kept in the pre heated oven for 35-40 mins or till the tooth pick comes out clean
  7. Cool in the pan for 5 mins; then invert it into the cooling rack. Once it's cooled, slice and serve
