Spritz cookies are crisp buttery cookies specially made during the holiday season. These cookies doesn't have any levening agents like baking soda or baking powder. I adapted this recipe from here and I tried with both normal whole wheat flour as well as whole wheat pastry flour. With pastry flour the cookies are crispier:) If we are not having cookie press, we can make small rounds with our hands or can also use pastry bags with star nozzle but I haven't personally tried it.

Ingredients:
- Whole Wheat Pastry flour - 1 cup + 3 Tbsp (I used Organic whole wheat pastry flour)*
- Butter - 1/2 cup, softened at room temperature
- Powdered sugar or Icing Sugar - 1/2 cup + 3 Tbsp (I powdered the organic unrefined cane sugar)
- Corn starch - 1/4 cup + 3 Tbsp
- Milk - 2 Tbsp (at room temperature)
- Vanilla extract - 1/2 tsp
- Salt - a pinch
**If required, we can also decorate with coloured sprinkles
Method:
- Pre-heat oven to 375F
- Sift the whole wheat pastry flour in a bowl and keep it ready
- In a wide bowl, sift the powdered sugar and corn starch and mix well
- Add in the softened butter into the bowl
- Using an electric hand mixer or whisk, beat it in low speed for few mins until they get mixed and become crumbly
- Now add in the Vanilla extract and a pinch of salt, beat well for few mins until it becomes soft and fluffy
- Gradually add in the milk and continue beating till it becomes light and creamy
- Slowly add the flour in intervals and mix gently until it forms a dough
- Fill the cookie press with the dough
- In an ungreased cookie sheet (if we use parchment paper or liner, the dough wont stick), press the cookie in desired shapes
- Bake in the preheated oven until it turns golden brown in about 8 to 12 mins
- Once its done, remove from the oven and allowed to cool in cooling rack
- Repeat the same for the remaining dough
- Serve warm or store them in the cookie jar or box:)
