Packing lunch boxes every morning always makes me look for recipes that are simple, quick, kid-friendly and easy to customize. This Mushroom Spinach Cheese Paratha is one of those recipes I make quite often for my kids’ lunch boxes.

I usually make a simple filling with mushrooms, spinach and cheese, seasoned with Italian herbs and black pepper. The combination is mild and flavorful, and the melted cheese makes it something the kids really enjoy.
Instead of making the usual round stuffed paratha, I like to make these square-shaped and neatly closed. For my younger one, I make them mini-sized, which makes them easy for little hands to hold and perfect for lunch boxes.
What I love most about this recipe is that I don’t always make the exact same filling. I customize it depending on what I have in my refrigerator that morning.
If I have spinach, I add it. If I don’t, I simply make mushroom and cheese parathas. I sometimes add finely chopped bell peppers or sweet corn as well. And on especially busy mornings, I may use a cheese slice instead of grated cheese to make things even quicker.
The seasoning can also be changed. I usually like Italian seasoning and black pepper with mushrooms, spinach and cheese because it gives the filling a mild, pizza-like flavor that my kids enjoy. If you prefer Indian flavors, you can use simple Indian spices instead.
So there really isn’t a strict combination for this recipe. Mushroom + cheese, mushroom + spinach + cheese, mushroom + bell pepper + cheese, or mushroom + corn + cheese — they all work beautifully.
Ingredients
For the Paratha Dough
- Whole wheat flour – 1 1/2 cups
- Salt – as needed
- Oil / Ghee – 1 tsp
- Warm Water – as needed
- Oil or ghee – for cooking
For the Filling
- Mushrooms – 1 cup, finely chopped
- Spinach – 1 to 1 1/2 cups, finely chopped, optional
- Onion – 1 small, finely chopped
- Garlic – 1–2 cloves, finely chopped, optional
- Cheese – 1/2 to 3/4 cup, grated
or cheese slices, as needed - Italian seasoning – 1/2 tsp
- Black pepper – 1/4 tsp
- Salt – as needed
- Oil – 1–2 tsp
Optional Add-Ins
You can customize the filling with whatever you have available:
- Bell pepper – finely chopped
- Sweet corn – cooked
- Spinach – optional
- Mushrooms – can be used on their own with cheese
Indian-Style Seasoning Option
If you prefer an Indian-style filling, replace the Italian seasoning with:
- Cumin seeds – 1/2 tsp
- Black pepper – 1/4 tsp
- Garam masala – 1/4 tsp, optional
- Red chilli powder – a little, optional
Method
Prepare the Dough
- Add whole wheat flour, salt and oil/ghee to a mixing bowl.
- Add lukewarm water little by little and knead into a soft, pliable dough.
- Cover and let the dough rest for 15–20 minutes or until we make the filling.
Prepare the Filling
- Heat oil in a pan over medium heat.
- Add chopped onion and sauté until soft.
- Add garlic, if using, and sauté for a few seconds.
- Add the finely chopped mushrooms and cook on medium-high heat.
- Mushrooms will release some water as they cook. Continue cooking until the excess moisture completely evaporates.
- Add chopped spinach, if using, and cook until it wilts and the moisture evaporates.
- If using bell peppers or sweet corn, add them at this stage and sauté for a couple of minutes.
- Add Italian seasoning, black pepper and salt. Mix well.
- Turn off the heat and allow the filling to cool completely.
- Once cooled, mix in the grated cheese.
If using cheese slices: You can simply place the cheese slice along with the vegetable filling while assembling the paratha instead of mixing it into the filling.
Making the Square Paratha- Divide the dough into equal portions. Make smaller portions for mini parathas.
- Take one portion and roll it into a small circle.
- Place some filling in the center, leaving some space around the edges.
- Fold the dough over the filling and seal the edges well.
- Gently roll it into a square shape. Avoid pressing too hard so the filling doesn’t come out.
- Heat a tawa over medium heat and place the paratha on it.
- Cook until the bottom starts turning golden, then flip.
- Apply a little oil or ghee on both sides.
- Cook until both sides are golden and the paratha is cooked through.
- Repeat with the remaining dough and filling.
Closed Quesadilla-Style Version
- For an even quicker version, roll the dough into a thin circle and place the filling on one half.
- Fold the other half over the filling and gently press the edges to seal.
- Cook on a hot tawa, flipping as needed, until both sides are lightly golden and the cheese is melted inside.
- This version is especially convenient on busy mornings because there is less shaping and sealing involved.
Lunch Box Tips
- For younger kids, make mini parathas that are easy for little hands to hold.
- For older kids, make regular-sized square parathas or circular parathas and cut them into smaller pieces if desired.
- Allow the parathas to cool slightly before packing so that excess steam doesn’t make them soggy.
- Keep the mushroom filling fairly dry for the best texture.
- If using cheese slices, they are a great shortcut on busy mornings.
- You can prepare the filling with just mushrooms and cheese if you don’t have spinach.
- Bell peppers and sweet corn are great additions when you have them available.
