This tomato rice recipe is very easy and quick and a perfect lunch box recipe. There is no grinding part or any addition of masala powders. But it tastes great :) Small onions are the best for this rice and if we are not having it, we can use red onion.

This tomato rice recipe is very easy and quick and a perfect lunch box recipe. There is no grinding part or any addition of masala powders. But it tastes great :) Small onions are the best for this rice and if we are not having it, we can use red onion.
Ingredients:
- Rice - 1 cup
- Ripe Tomatoes - 3 to 4 nos, sliced or chopped
- Small Onion - 1 cup or 1 red onion sliced (Small onion tastes the best)
- Garlic - around 10 cloves, halved
- Oil - 1/2 tbsp
- Mustard seeds - 1/2 tsp
- Channa Dhal - 1 tbsp
- Split Urad dhal - 1 tbsp
- Curry leaves - few
- Green chillies, slitted - 2 to 4 nos (adjust as per spice level)
- Turmeric powder - 1/2 tsp
- Salt - to taste
- Coriander leaves - to garnish (Optional)
- Wash and soak 1 cup of rice for atleast 30 mins and then cook as usual in such a way the grains are separate. Once its done, spread it in a plate and allow it to cool
- Heat oil in a pan, once it becomes hot add the mustard seeds followed by Channa dhal, Urad dhal and then curry leaves
- Once the dhals turn golden brown, add the garlic pieces and saute for a minute
- Then add the onion and green chillies, saute for 3 to 4 mins until it becomes transparent and pink (This time I ran out of small onions so used red onion, but small onions are highly recommended)
- Now add the chopped tomatoes, sprinkle salt and saute in medium flame for few mins until it becomes soft and mushy
- Add turmeric powder and fry in low flame until the tomatoes get well cooked (No need to add any water)
- We can cook covered for few mins
- Check for salt and switch off
- Add in the cooked rice and mix gently so that the rice grains get mixed with the tomato paste
- If needed we can garnish with coriander leaves
- Serve hot or can be packed in lunch box!
