Paneer-Sweet corn Masala |
Ingredients:
- Paneer, cubed - 1 cup (I used Home made paneer)
Home made Paneer - Sweet corn (Frozen) - 3/4 cup
- Garam Masala powder - 1/2 tsp
- Oil - 2 tsp
- Bay leaf - 1
- Kasoori Methi - 1 tsp
- Salt - to taste
- Oil - 1 tsp
- Onion, chopped - 1 no
- Tomato, chopped - 2 nos
- Red / Green chillies - 1- 2 nos (Adjust as per spiciness)
- Ginger - 1 inch piece
- Coriander seeds - 1 tsp
- Cinnamon - 1 inch piece
- Cloves - 2 nos
- Fennel seeds - 1 tsp
- Pepper - 1/4 tsp
- Turmeric powder -1/4 tsp
- Heat 1 tsp of oil in a pan, add chopped onions, tomatoes, ginger and chillies; saute well for 8-10 mins till it becomes mushy and add the rest of the items and saute well; switch off and allow to cool. Grind to smooth paste
- In an another pan, heat 2 tsp of oil; Once it's hot add bay leaf and cloves, fry for 30 secs
- Add in the ground masala and saute for a min
- Now add the frozen corn kernels and allow to cook for 4-5 mins. If we are using fresh corn, we can pre-cook it and add to the masala
- Once it gets cooked, add required salt and add the paneer cubes; cook for another 5 mins in low flame
- Add in the garam masala and kasoori methi; switch off
- Serve hot with roti, parathas or with any mild pulaos
