Paneer-Sweet corn Masala

Servings: 2-3 persons

 
Paneer-Sweet corn Masala

 Ingredients:

  • Paneer, cubed - 1 cup (I used Home made paneer)
    Home made Paneer
  • Sweet corn (Frozen) - 3/4 cup
  • Garam Masala powder - 1/2 tsp
  • Oil - 2 tsp
  • Bay leaf - 1
  • Kasoori Methi - 1 tsp
  • Salt - to taste
To saute and grind:
  • Oil - 1 tsp
  • Onion, chopped - 1 no
  • Tomato, chopped - 2 nos
  • Red / Green chillies - 1- 2 nos (Adjust as per spiciness)
  • Ginger - 1 inch piece
  • Coriander seeds - 1 tsp
  • Cinnamon - 1 inch piece
  • Cloves - 2 nos
  • Fennel seeds - 1 tsp
  • Pepper - 1/4 tsp
  • Turmeric powder -1/4 tsp
Method:
  1.  Heat 1 tsp of oil in a pan, add chopped onions, tomatoes, ginger and chillies; saute well for 8-10 mins till it becomes mushy and add the rest of the items and saute well; switch off and allow to cool. Grind to smooth paste
  2.  In an another pan, heat 2 tsp of oil; Once it's hot add bay leaf and cloves, fry for 30 secs
  3. Add in the ground masala and saute for a min
  4. Now add the frozen corn kernels and allow to cook for 4-5 mins. If we are using fresh corn, we can pre-cook it and add to the masala
  5. Once it gets cooked, add required salt and add the paneer cubes; cook for another 5 mins in low flame
  6. Add in the garam masala and kasoori methi; switch off

  7. Serve hot with roti, parathas or with any mild pulaos
