Mint-Tomato Chutney |
- Pudhina / Mint leaves - 1 cup, packed
- Small Onions - 8-10 nos / 1 Big Onion, chopped
- Ripe Tomato - 1 big sized or 2 small ones, chopped
- Fresh coconut - 2-3 tbsp (Optional)
- Oil - 1 tsp
- Channa Dhal - 1 tbsp
- Urad Dhal - 1/2 tbsp
- Red Chillies - 2-3 nos (adjust per required spice level)
- Salt - to taste
- Oil - 1 tsp
- Mustard seeds- 1/2 tsp
- Urad dhal, split - 1 tsp
- Curry leaves - few
- Asafoetida - a generous pinch
- Heat 1 tsp oil in a pan, add Channa & Urad Dhals fry till they turn golden brown. Then add the red chilly, fry for 30 secs
- Add chopped onions and fry for 1-2 mins
- Add chopped tomato pieces and saute till it turns mushy
- Switch off the stove and add the mint leaves and saute till it shrinks in volume
- Add the coconut pieces if using and allow the mixture to cool
- Grind to a fine chutney
- In a small pan, heat coconut oil and once it becomes hot add the mustard seeds followed by urad dhal, curry leaves and asafoetida
- Pour the tadka over the chutney
- Serve with hot Idlies / Dosa
